RECIPE: LAMB TAGINE

 It is a typical dish because lamb is very important in Morocco. Abraham sacrificed a lamb instead of sacrificing his son so lamb became a very important symbol.


INGREDIENTS (TWO PEOPLE)
- 1 lamb's leg
- 2 carrots
-2-4 chives
-1 sweet potato
-6 garlic cloves.
-200g of almonds
-10 dates
-1 lemon.
-1/2 litre of water
- 2 tbsp of extra virgin olive oil
-A pinch of salt
-2 tsp of pepper.
-1tsp of saffron
-A pinch of cumin.
-1 tbsp of turmeric.
-2 tbsp of coriander.

 PREPARATION METHOD: 

 While you cut the lamb into pieces in a bowl preheat the oven to 150ºC. Add the saffron, the turmeric, the cumin, the salt and the pepper to the lamb.. Pour the olive oil and mix it all. Leave it macerate for two hours. Heat a tbsp of olive oil and the garlic in a large casserole and then add the lamb. Leave it brown.

Cut the carrots into pieces, the chives, and the sweet potato and add them to the casserole. Incorporate the coriander and season it.  Cook it on a slow burn for fifty minutes. 


Add the almonds and the dates to the casserole, sprinkle with coriander and put some slices of lemon. Pour some lemon juice, add a coriander stick and leave it stand. Place in the oven and cook for 2-2 and  1/2 hours or until the meat is tender.


Serve it.

Morocco's economy is considered a neoliberal economy governed by the law of supply and demand, but in some places the price is not fixed because you can negotiate it with the seller.

This economy is based on the primary sector which constitutes the biggest source of employment.
Mainly this economy is based on the cattle raising and farming, fishing and on the oil industry because there is much petrol in the Sahara. The economy raises also thanks to commerce and tourism, because this country has a great variety of landscapes. There is also secondary sector, mainly the textile industry.Due to globalization other countries manufacture their clothes there because is cheaper.











This country develops slowly but it keeps improving. This country has a president but the leading figure is the king, Mohammed VI who is reforming a big part of the country. The stock market is situated in Casablanca , and the 60% of it is controlled by the king.













GROWTH OF THE POPULATION

The growth rate in Morocco has descended in the last few years, partly due to the new educational programmes regarding the family, but the population in Morocco continues growing at a rate of 1,5%. More than 53% of the population is younger than 24 and the analysts fear that a demographic explosion will take place when the youth achieves the childbearing age. But not everybody comes from a moroccan ascendance. Berebers are the original population of Morocco and approximately three fourths of the inhabitants there are Berebers.













Technological development
Science and technology in Morocco has significantly developed in recent years. The Moroccan government has been implementing reforms to encourage scientific research in the Kingdom. Nonetheless, the technology seems to be oriented to people who earns a good income and people with a lower income have,for example, mobile phones that we would consider outdated. Some traditional shops haven't got electric light nor electrical devices. The government use the money to invest in other things instead of help people to have better houses than the houses that they have.














Morocco's agriculture

This sector has very big problems nowadays and it's very sensitive to the climatic fluctuations. It represents the 15% of the GDP and the 50% of the population that live there work in the crops.
This people live in the mountains and in rural areas.

The agricultural production isn't regular because in winter it rains a lot and in summer there is drought so it causes problems in the cereal crops and in other crops.
In this agriculture are very typical tomatoes, olives, melons, honey, nuts, strawberries, rice, corn, potatoes, semolina, dates... They grow this different product t to sell them in markets.

Technologic developed in Morocco's Agriculture
If the production is oriented to the big companies, they use high technological level in relation to this country but if the product is to self in town's markets the process is simple and technology is almost inexistent.

































Morocco's stockbreeding

Even though there are a lot of problems regarding stockbreeding, like the climatic change, the high prices of the food for the cattle and the lack of new technologies, it is the most important activity within the economy of Morocco.

The farmers take care of a great variety of animals, like cows, sheep, lambs, goats... from this they obtain wool, milk, cheese, eggs, meat, leather... They also breed camels because they're very demanded by tourists. In this case is more frequent the ovine and goats cattle.



In this country, a lot of hens produce ecological eggs or free range eggs. But other hens produce "artificial"eggs


SILVICULTURE

In Morocco they use the silviculture to grow argan (These trees are the most common in this country),wood...
They destroy a lot of territories but this country is very big and it has a lot of fields so we can't say that they exploit forests like in Brazil...

FISHING
The fishing industry in Morocco has been for a long time an economic pillar for the country.
The kingdom is considered the largest fish market in Africa. This sector gives 400.000 jobs including 104.000 fishermen
The coast has got sardines, bonito and tuna but this country hasn't got modern fleets nor technological advanced that would permit to benefit fully from these marine resources. There is a lot of exportation to other countries and there had been reforms in this sector in the last few years.
